Cheesy Cauliflower Rice with Broccoli and Chicken

Ingredients

  • 1 lb chicken breast (500g) (cut into bite-sized cubes)
  • 1 onion (diced)
  • 3 cups cauliflower (blended/chopped into fine “rice”)
  • 3 cups broccoli
  • 2 garlic cloves (minced)
  • 1/2 cup chicken broth
  • 1/2 cup cream cheese
  • 1 cup cheddar cheese (grated)
  • 1 tbsp paprika
  • 1 tsp ground coriander
  • to taste salt and pepper

Instructions

  • Heat up a skillet and sauté the chicken, onion, garlic, paprika, coriander, salt and pepper in a little bit of oil, until the chicken is cooked. About 5-10 minutes.
  • Add the cauliflower, broccoli and chicken stock and allow to cook for another 5-10 minutes, until the broccoli is cooked to your desired tenderness.
  • Add the cream cheese and stir until everything is melted and combined.
  • Take a bite and see if you need any more salt!
  • Now, top with the grated cheddar and slide under the broiler until the cheese is melted, golden and bubbly. (You can skip the broiler and allow the cheese to melt by putting a lid on the skillet for a couple of minutes if you desire).
  • Garnish with some freshly chopped parsley, and serve!

Lemony Chicken + Broccoli Skillet Meal for Clean Eating Success!

Ingredients

  • 4 boneless, skinless chicken breasts
  • large head broccoli, broken into florets
  • 1 Tbsp avocado, or olive oil
  • sea salt and fresh ground black pepper, to your taste
  • 1 tsp chili flakes
  • 2 Tbsps capers
  • 1 cup chicken broth
  • 1/4 cup fresh squeezed lemon juice
  • 3 cloves fresh garlic, minced or pressed
  • fresh lemon slices to garnish (optional)

Instructions

  1. Heat oil in a large skillet over medium-high heat. Season the chicken with sea salt, pepper, and chili flakes and rub it on both sides.
  2. Cook chicken on the skillet for about 3-4 minutes per side or until golden brown. Remove and set aside.
  3. Add in the chicken broth, lemon juice, capers, and garlic to the skillet. Stir and scrape up the brown bits from the bottom of the pan.
  4. Add in broccoli, then nestle in the chicken back to the skillet.
  5. Simmer for about 10 minutes, until broccoli is bright green and tender-crisp and chicken is cooked through.
  6. Garnish with lemon slices and enjoy!

Teriyaki Chicken with Broccoli

Ingredients

4 Servings
1 lb boneless, skinless chicken breast cut into 1 inch pieces
2 clove garlic minced
4 green onion chopped
1/2 cup low sodium chicken broth
2 tbsp light teriyaki sauce
2 cup brown rice
4 cup broccoli
salt (to taste)
black pepper (to taste)

Directions

30 minutes
1. Season chicken with salt and black pepper to taste. Spray a large nonstick skillet with cooking spray and heat over medium-high heat.
2. Add garlic and saute for about 1 minute. Add chicken and stir fry for 5 minutes or until browned on all sides. Add green onion and cook, stirring occasionally, for 2 minutes or until softened. Add chicken broth and teriyaki sauce and simmer for 5 minutes or until the chicken is cooked through and the sauce has reduced slightly.
3. Evenly divide brown rice among 4 plates or shallow bowls. Top each with about 1 cup each of chicken and broccoli.
